Putting a ticket on hold a date provided in Capture Answer

Hi folks,
Can anyone provide advice on how to do this if it's possible.  I would like to be able to put a few of our Ticket types on hold until a date that the customer provides in the capture questions, for example: they provide a leaving date for when a staff member is leaving the organisation so that we can remove all their access after that date. 

I'd like that ticket to automatically go on Hold if the date is in the future and move to In Progress once the date provided has passed.  Is this possible and if so, how would I do this?

Any advice appreciated or if you have something similar to this in place that you would be willing to share that part of your process I'd hugely appreciate it.
