We would like to test the sending of encrypted email from hornbill but without impacting the current email configuration

Can anybody suggest the best way to add test outbound mail route to allow us to configure this are TLS??

We will then look to implement those settings on the live mailbox once proven

You would need to create a new outbound route and set up the desired encryption and test.  This is covered here:

Alternatively set encryption on the existing route out of hours for a brief test and then set it back to its current setting.
