Morning,

I can't see all the Priorities we have set when I select the highlighted dropdown below.  For example, we have the normal P1 to P5, but I also have a SLA for Starters and Leavers, but these don't show. 

Tried just typing it in but that doesn't work.

Guessing I'm missing something simple here?

Sorry to pedantic, but an SLA is not a Priority - to alter the Service Level you would need to use an Update -> Service Level node, not an Update -> Priority node.
